From the vine to the glass It is the title of the technical meeting promoted by ERSAF, In collaboration with Riccagioia Foundation e Lombardy Region, dedicated to the in-depth study of pressing techniques and their role in the quality of must and wine.

The event will take place on July 24, 2026 at the headquarters of Riccagioia Foundation, in Torrazza Coste (PV), and represents an opportunity for comparison between scientific research and professional experience in the field, with particular attention to the processes that influence the quality of wine production.

During the morning, case studies, technical insights, and future perspectives related to the phase of pressing of the grapes, This is a crucial moment for obtaining quality musts. They will take part Daniela Fracassetti, associate professor at the Department of Food and Environmental Sciences of the University of Milan, with a report dedicated to case studies and future perspectives of pressing, and Pietro Dilernia, winemaker of the company La Versa, who will present application experiences and results obtained in the field for the optimization of the must.

The initiative is part of outreach and knowledge transfer activities aimed at operators in the wine sector, fostering dialogue between the research world and the production sector.
